The legal categories focus mostly on the equipment used during the production process but exclude many socio-cultural and historical aspects. For that reason, the concept of traditional mezcal was created, which specifically includes these factors under a more comprehensive criterion. The production is based on a collective historical and mentality construct that has been passed down from generation to generation from the colonial period to the present.
